A question about bread making

I am making bread nearly daily now. Boys love it, ds doesnt like bougjt bread now.

Can i do the first rise in the evening, leave dough in the fridge and do the 2nd rise late afternoon so we can have warm bread for dinner. I find with after school activities i dont have time for 2 rises.

I know some members do the first rise in the evening, the second rise in the fridge overnight and then bake the loaf in the morning.  You may need to experiment Hally.  The loaf will collapse if left too long. :)

Hally you may have to fiddle with the amount of yeast,  that is use less.  Do the second rise in the fridge,  bring it to room temp,  then cook it.T  his will take 1 1/2 hours.    You might like to consider rolls , for if you use the cold start method,  you can have them on the table in 1 hour.

I have tried it with my No Fuss recipe and it works very well, ,  but I can't see why Isi's rolls wouldn't work.   I have posted the  cold start on my Blog.  Sorry, I can't do the link thing yet.
