Tomato Paste Concentrate
« on: February 22, 2009, 04:04:16 am »
Hi,
Being the end of summer we have an over abundance of tomatoes.
Does anyone have a recipe for tomato paste (concentrate)?
Thanks :D

I have googled 'how to make tomato paste' and can't see that anyone would go to all that trouble and time to make so little of it.  I may be wrong but do what I did and see what you think.  If anyone submits a recipe for our thermomix though, I will give it a go myself.

Thank you - I googled it as well.  Have frozen the tomatoes for now until I have a spare day to try....  :)

While the TMX would not be the best place to cook and concentrate the tomato paste it would be great to blitz it before straining.

Not sure what the recipe is that you have found I :-* B, but please be aware of the fact that the bulk of glutamines that give the tomato flavour are in the seeds and skin - so best to cook these with the pulp ( even if you put them in muslin like apple cores etc for jam and then remove before bottling)
