Oven roasted seasoning. / stuffing.
« on: December 13, 2011, 09:58:23 am »
When I was a child,  Mum would make this for Dad.  It was the only stuffing that he would eat.

In a large baking dish,  mix together, Bread crumbs, sliced onion,  parsley, rosemary, sage, Chopped,  lots of Salt  and pepper.  drizzle good oil over the lot and mix by hand. Place in oven with the roast,  and every 10 mins. Or so turn it over.  Do this until it is crisp and brown.
Serve with roast meat.

This is the health version,  Mum used to save the rinds  from bacon and mix these in.T  hese replaced the oil that I have used.

Years ago when Mum and Dad were still around and we had a large turkey (cold) we used to stuff it but then do this with the leftover stuffing. It was always very popular. Now we only have a home done turkey roll as the family have spread out. Only us and mad ma in law. (must nail down all the things on the table ;) ;) ;) ;)) We do love this version of a ma in law too! She's nothing like the original though.

Cookie, yourMIL always brings a smile to my face.  We all have difficult things to cope within Christmas day.  Good luck.  And yes you should do this with left over stuffing.  We are having a turkey roll this year,  so that is why I thought I might make this stuffing.

Thanks Chookie. We have to laugh about it otherwise we'd cry. She has gone from being a quiet, soft, gentle European lady to a loud and foul mouthed witch who knocks off anything she can get her hands on no matter how useless it is. She actually has frontal lobe dementia and diogenes disease.
Would you believe I bought her a Christmas gift this morning that I know she will love. It' a zhu zhu pet. (a little toy guinea pig that runs around on the floor making silly noises) Hopefully she won't fall over it. Once it goes under the bed or out of sight she will forget she has it though.

I love zhu zhu's Cookie and I'm sure MIL will too.  If you lose her on the day, look under the bed because she is bound to follow it under there.  I had some snapping at my heels whilst eating tea down at DD's last Christmas - frightened the life out of me ;D
They are so much easier to keep than the real thing - believe me I know as I have chased many a guinea pig around the backyard at DD's place in years gone by.

DD was looking at it last night. I might have to go and get another one. I love them too.

Maybe that's the answer to Ds christmas present. He is desperate for a pet of his own (we have a family dog and DD has a rat) but after just coming back from Peru where everyone was eating guinea pig I just can't bring myself to buy him one as a pet ;D
