Raw macadamia lime cheesecake - pg 201 Quirky Cooking

Made this Saturday night as a birthday cake for yesterday. It was easy to make just took time as each layer you put in the freezer but bonus was last night other than taking it out of the freezer to defrost I didn't have to worry about doing anything more.

It turned out really good. It was delicious enjoyed by all (even my 21 month DD who is not a sweet person) & they were surprised there was no cheese or dairy in it.

Will definitely make again.

I made this when Jo put this recipe on her blog.  I really liked it, but DH didn't - I ended up eating so much of it I don't know if I can make it again now as it was a case of "too much of a good thing" spoiling it for me, which is a real shame as it is an excellent recipe.

Cuilidh since DH went on his elimination diet I'm like that with a few things & why I'm drying to find things that he can eat and we both like.

I have made this over the last couple of days.  I haven't tried it properly yet but have licked each stage and it  certainly passes the lick test.
It's quite expensive to make with all the macadamia nuts and cashews but  reasonably healthy.  I will reduce the nuts on the topping to 50 gems next time as I only used 1/2 of what I chopped.
The coconut cream is a component of the cake.  It looks and taste yum. It's on page 26. I imagine very versatile and you also get coconut flour as a by product.
I will post a photo when I cut it although it appears true to the book and Kerries  photo.
