Mango Bread

MANGO BREAD

Makes two 9" X 5" loaves.

4 cups flour
4 tsp baking soda
3 tsp salt
4 tsp cinnamon
3 cups sugar
1 cup oil
6 eggs
2 tsp vanilla
2 cups raisins
4 cups chopped mango

Mix together flour, baking soda, cinnamon, and sugar.  Add oil, eggs, vanilla, mangoes, and raisins.  Bake at 350F for about one hour in 9" X 5" X 3" loaf pans.  Check with toothpick to make sure it's done.

I don't know where this recipe came from but it's really good.  A nice dark brown crust and a light crumb.  Enjoy!
