Ingredients:
1 cooked egg yolk
½ onion
1 small handful of fresh parsley
1 tbsp capers
2 tbsps fresh oregano
½ tbsp fresh tarragon
100g olive oil
25g Balsamic vinegar
Black pepper
Salt
Preparation:
Peel the onion, cut it and put it together with the rest of the ingredients in the

Blend
1 minute / Speed 3 then for a
further minute, gradually increasing from Speed 3-10.
Keep in the fridge.
Tips/Hints: The mixture of herbs is what makes this sauce delicious and which gives it an intense green colour. It is a perfect accompaniment for meat, fish or salads. It is served cold.
