Cashew Nut Vinaigrette (Spanish recipe)

Name of Recipe:  Vinagreta de Anacardo (Cashew Nut Vinaigrette) – not tested

Serves:  Not stated

Ingredients:
100g cashew nuts
180g extra virgin olive oil
30g vinegar
Pepper
Salt

Preparation
Put the nuts in  *: and grind 3 seconds / Speed 7.
Add the remaining ingredients and mix 1 minute / Speed 1.
Stir to mix the ingredients.
Serve at room temperature.

Tips/Hints:  This is a vinaigrette suitable for dressing salads (rocket, lettuce, Swiss chard, leeks, peas) and to accompany pasta, fish and seafood.  The cashews can be substituted with pistachios, toasted pine nuts, walnuts or other nuts.  It combines well with other sauces, such as cheese.

Origin:  This is a translation of a recipe in Salsas y Aliños con Thermomix (Susaeta Ediciones)

I love cashew nuts but would never have thought of using them in this way - I will have to put this onto my "to try" list.
