Name of Recipe: Mexican Meatloaf
Number of People: 4-5
Ingredients:Sauce1/4 cup tomato sauce (ketchup)
1/2 cup salsa
Corn chips crushed - flavour your choice (I used nacho)
grated tasty cheese
600g beef mince
1 green capsicum quartered
1 onion quartered
2 garlic cloves
1 slice of bread with crust left on
2 Tbsps
taco seasoning - highly recommend Sonan's mix
1 egg
Preparation:Pre heat oven to 180c.
Mix sauce and salsa together in a bowl, set aside.
Add bread slice to jug, and turbo until crumbs. Set aside.
Add quartered onion, capsicum & garlic cloves. Chop 3 seconds, speed 5.
Add in egg, taco seasoning, mince & bread crumbs. Mix 30 seconds,
speed 4.
Spray a 21cmx12cm (approx.) loaf tin. Press 1/2 mince mixture into base of tin.
Sprinkle cheese, then crushed corn chips.
Press down firmly the remaining mince mix.
Cook for 50 minutes.
Remove from oven. Carefully drain liquid from tin, and stand covered with foil for 10 minutes.
Turn oven up to 200c.Carefully turn meatloaf out, onto a tray lined with greaseproof paper.
Spread all of the salsa/sauce mix on top, and top with some more cheese & crushed corn chips.
Bake a further 10 minutes.
Remove from oven, and stand 5-10 minutes before serving.
Photos:Tips/Hints:Using 2 Tbsp. of Sonan's taco seasoning was perfect heat/spice for us. I think it was just on the heat verge for 8 year old (but he still ate it all), so adjust the amount according to your taste.
members' commentsfrozzie - We made this last night and enjoyed it although next time I will wait to cook it all at once....I cooked the meat loaf first then cooled it down and put it in the fridge until later that night to finish off but found it a little dry...kids didn't like it but wouldn't take notice as at the moment they aren't liking anything.
