Kezza from Central Coast NSW

Hi all. I purchased my thermie for Christmas for myself. I am the only one that cooks in our house, so it was time I had a helper in the kitchen! So far I have tried sorbets. dips, bread, curries, risotto, and smoothies. I love it and my husband & 12 yo son like it also. The challenge now is to teach them how to use it
I am also have low fat recipes. Some of them I notice use full cream milk & cream. Am I able to safely substitute these with skim milk & evaporated skim milk?

Hi Kessat = congratulations on getting that kitchen helper! You sound as though you've been really busy! Give your DH and DS time . . it won't be too long before they're cooking up a storm for you. I can't quite find where it is on the forum but someone suggested she prints out the favourite recipes, laminates them and then attaches them to a ring and hangs it up in the kitchen. The idea really stuck with me as an excellent one - but just for the moment I can't recall who it was!! I'll remember I'm sure at around 2:00am!! Just get them to run through the steps with you a couple of times and then there'll be no excuses for not being able to get together a simple dish
Let's know how you get on!

Welcome Kezza. Where about on the Central Coast are you? I used to live there and miss it and my friends so much.
I let my hubby use thermie but sometimes it is more than a hassle than a convenience. Once he didn't have the seal in the lid and mess everywhere, and he never cleans it, but at laest he tries. He works long hours so it usually pancake batter he makes in it on the weekend or the sundried tomato and cashew dip.
I am sure you should be able to make low fat versions of most recipes. Alot of members reduce the sugar in most recipes and can probably give you more advice than myself.
Take care and happy cooking

Yes it was Ceejay
Welcome Kezza. The best thing for getting blokes to use the TMX is to tell them it is cooking with numbers!!
The first numbers are the weights of ingredients, then the next numbers are the temperature numbers, then you need the time numbers and lastly the speed numbers. The BEST part is that every recipe will tell them EXACTLY what those numbers should be
BTW my teenage sons pointed this out to me to use at my demo's (all members of my house use it including DH, 3 teen sons, DS who is 7 and DD who is 5 under supervision of course lol)

Hi and welcome Kezza,
I use low fat milk in all my recipes as We don't have full cream milk in the house and I have never had an issue. I have heard that the light Philly cream cheese is not always the best option for some things but again I haven't had any issues there either. I guess it's worth a try. I also reduce the sugar in many recipes and don't notice to much of a difference. Good luck with the training of the other family members. My DD loves using the TM but no one else touches it which is fine by me lol.

Welcome Kezzat. My hubby rarely use our TMX BUT my sons, especially the youngest one (11) love cooking with it. Won't have to book a cooking time with TMX after the school holidays

Welcome to the forum Kezza. Some recipes might work with low fat ingredients,it's just trial and error at times to see if they work.

Hi Kezzat, welcome to the forum. I also only use low fat milk and if I use evaporation milk I add a little bit of cornflour to help stabilise it so that it doesn't split.

Welcome Kezza. Like many others I do not have full cream milk in the house. As you read recipes on the forum and reviews of those in books you will see that many people if not all reduce the sugar in them. I always use low fat cream cheese. It can make the dips a bit more liquid but they're still ok. The only thing I have found that I have to use full cream milk for is making ricotta.

Welcome Kezzat. All my children were born in Gosford Hospital 1984-1986 and we lived in Terrigal where we built our home in 1980. A beautiful place and we have many happy memories. We moved to Perth in 1990. My DH is from Clovelly and I am a Perth girl.

Welcome Kezza,
Lovely to see someone from the Central Coast. I grew up a Coastie (Budgewoi) and now live a little further north in Lake Macquarie.
I only ever use skim milk and haven't had a problem. Have fun with your thermomix.
