Tomato Conserve (with photo)
« on: October 30, 2012, 03:27:28 pm »

Hi everyone
I was a bit busy lately so I couldn't be much around
We organized a Halloween party and the preparations took soooo long :)
I will publish some Halloween recipes soon, even if I am late to give you some idea for this years Halloween

Anyway..
Today I'd like to share this tomato conserve recipe with you
I am very satisfied with it.
I saw that in your EDC book there is the same title, but since I don't have your book I don't know if they are the same
Let me tell how I made this anyway.
I miss being around

Ingredients:
1000g tomatoes (cut roughly and drained)
40g onion
1 clove of garlic
40g of celery stick, roughly cut
5g parsley leaves
5 basil leaves
Optional: thyme, oregano, marjoram (I used thyme)
1 tsp salt

Preparation:

Wash tomatoes. Cut out the core piece at the top of the tomato, then cut roughly into pieces and let them drain. (If you wish remove the seeds as well. Since I had cherry tomatoes I didn't feel any need to remove the core piece. I just halved them and removed the seeds of most of them)

Put all the ingredients in TM Bowl and blend for 1 minute on Speed 10.

Place the MC on TM Lid in an inclined position and cook for 30 minutes at Varoma Temperature on Speed 1.

Transfer the boiling sauce into sterilised jars, close them tightly.

Place the jars in a deep pot. Fill it with water.

Bring to boil and then boil for 20 minutes on low heat.
When the water gets cold remove the jars, wipe and store in a cool dry place.

Enjoy..

I am very happy with this tomato sauce. It tastes so good!
So far I've used it as a simple pasta sauce and also while preparing Pizza Margherita.

Adapted with a few modifications from the recipe titled as "Conserva di Pomodoro-cotta" in Io e il mio Bimby.

Your blog photos of your veggies look wonderful fafarllina. You seem to be a natural in the garden growing plants.Be careful with the fennel, it can become a pest, self seeding all over your vegetable patch. :)
Enjoy Hallowen :-*

Thank you cornish cream
I didn't know about fennel! I will try to keep an eye on them ;)
I enjoyed growing vegetables this summer. I regret for not having done it before!

Thank you for Halloween wishes
We wanted to organize an evening for 27th October Saturday because some guests weren't gonna make it for the 31st.
Unfortunately the weather changed and they said it was going to rain that day
So we had our lovely - spooky- evening 25th Thursday. We celebrated it almost one week before the actual date
It was earlier than planned, we were only three, so it was quite tiring to prepare all
at the end it was very rewarding and turned out to be a success

Happy Halloween everyoneee

Farfallina, as you suspected, this recipe is the the same as the one in our EDC apart from the fact you have cooked it on Varoma temperature and ours says 100CC.  Your recipe has the bonus of the lovely pictures though  ;)

This was really easy to make and with a glut of cherry tomatoes it was great to be able to preserve them for later use. Nice flavours and will be really good on a pizza base.
