Name of Recipe:  Sopa Donosti – not tested

Serves:  4

Ingredients:
12 crayfish
For the sofrito
150g tomatoes
½ leek
25g shallots
25g butter
25g olive oil
Other ingredients
750g water
25g brandy
25g white wine
Salt
150g rice
1 truffle, grated

Preparation
Remove the heads from the crayfish and keep them.
Peel the tails and reserve.
Peel the tomatoes, remove the seeds and chop them.
Wash the leek and chop it.
Peel the shallots and chop them.
Add the sofrito ingredients to the  *: with the crayfish heads 5 minutes / 100° / Speed 5.
Add the water, brandy, wine and salt 5 minutes / 100° / Speed 4.
Strain the stock and wash the  *: well.
Pour the stock back into the  :-: with the rice 10 minutes / 100° /  :-:^^.
One minute before the end, add the reserved crayfish tails.
When the time is up, check for salt and serve, accompanied with the grated truffle.

Origin:  Translated from a recipe in Cocina española con Thermomix (Susaeta Ediciones).

In the picture in the book, they looked quite small.  They are freshwater crayfish 'cangrejo de río' so maybe smaller than salt water ones.  I don't eat fish so know very little about it :-[

Have just looked into this and is difficult to judge the price at the moment because they are out of season in the UK.  I saw some peeled tails for £16 for 900g, but you would't get the heads to make the stock.  Looking at the picture of them, they seem very small and almost sertainly not like the lobster sized ones you can get in the sea.  See:  http://www.estuaryfish.com/productdetail.aspx?Product=Crayfish%20Tails&prod=a5cb6504-d343-4ec1-bc6a-1c7c71a6eb6e.

I wonder if they are anything like our Yabbies here in Australia.  I think prawns could be substituted here JB.

Thanks JD.  Yabbies is the word I was looking for!  I knew that in Australia there was a name but couldn't think what it was.  We just call them all crayfish over here and yes, they do look about the size of a large prawn.
