Jam Kisses - sponge kisses
« on: February 29, 2012, 07:18:45 am »
These are different to the recipe Cookie posted, Mixed Berry Jam Kisses although they do look the same.

Jam Kisses converted from kraft.com.au  This recipe makes 24 kisses, 12 when filled and joined.

3 eggs, room temperature
100g castor sugar
100g plain flour            )
1 tsp baking powder     )   sift these 3 ingredients together twice
1/8 tsp cream of tartar  )
25g butter, melted

130g cream
125g Philly spreadable cream cheese, room temperature
1/2 tsp vanilla extract
1/2 cup jam of your choice

Preheat oven to 180oC fan forced.
Line 2 trays with baking paper

Insert the butterfly, add the eggs and castor sugar and beat for 15 minutes/speed 4 MC off. I pressed the temperature button to 50o for the last 6 minutes to help the mixture thicken up.
Remove the butterfly and add the sifted flour, baking powder and cream of tartar mixture.
Gently fold in with a spatula then add the melted butter and mix that in.
Spoon heaped teaspoons of mixture onto the prepared trays, leaving room for them to spread.
Bake for 10 mins until golden.
Cool on a wire rack.

Filling
Place the butterfly into the TM bowl, add the cream and beat for 20 sec/speed 4. Add the philly cheese and vanilla and mix 10 sec/speed 4.
Spread some jam onto one of the cakes, top with some philly mixture and place another cake on top. Repeat with the number of biscuits you want to serve immediately.
Dust with icing sugar.

I have placed the excess biscuits into the freezer and will take out a few each time I want them.  The filling will keep in the fridge long enough to use up the remainder of the biscuits.
