Thanks heaps for the tips everyone. I tried it out and it worked great. I assume if I was going to freeze some bases I would just do it after the first rise?

 Wonder, i use dried yeast i have never worked with fresh yeast, have you?
i don't need a recipe i'm italian

I generally use dried yeast which i keep in the freezer but did try some fresh yeast a few weeks ago but i made three lots of pizza dough for a pizza party, only used the fresh yeast in one batch and forgot which batch it was so wasn't able to do a taste test! I'm still struggling to find the perfect pizza base for us although everyone at the party seemed to love them. This week I've made Teninas dough from dinner spinners 24 hours in advance and put straight into the fridge so will see how they go tonight. Maybe this will be the one.
