Info about induction cooktops cookware and cooking please

Hi! There is a house we are interested in that has an induction cooktop and I just wanted to hear about +ves and -ves about these cooktops.

Also I know you need cookware that can stick to a magnet for this but I want to hear from those who have this...what type of cookware this is (eg brand names and approximate costs eg what does a 28cm saucepan cost and what brand is it?)

How have you found cooking with this compared to a regular gas cooktop? Is it faster? More reliable and even?

I have a gas cooktop, but my neighbour has an Induction one, and she is really happy with it.. I have used it too, and it is very responsive to changes in temp, and it is really easy to clean.  Much easier than my gas cooktop.  Most of my existing saucepans will work on her cooktop, however, my big aluminium stock pot which we have used for jam making won't work on the induction cooktop.

I have just bought a new Scanpan pressure cooker which is supposed to work on induction cooktops, but I haven't tried it on hers yet.. I would consider it if I could ever afford to upgrade my kitchen.

Tasty we bought a hotplate for the caravan that is induction. I thought the pots in the van would be fine as they weren't expensive, but they weren't. I took a magnet from my fridge and went shopping. I found a set for the caravan in Big W that looked amazing and were really low priced. They have glass lids so I can see the food in them. I think it was $50 for a large pot, frying pan and two smaller pots. I haven't used them a lot but so far so good.
I have a friend who has induction cooking and she loves it.
May all dairy items in your fridge be of questionable vintage.

I have three "portable" induction burners that I began using back when I was still catering (after having a butane burner explode)
They work great with cast iron, enamel cast iron - I use my old Descoware, Copco and newer Le Creuset on them quite often.

The heat controls are better than on regular electric cooktops and you can get a lower heat that is maintained correctly for long periods, as when you want to cook something delicate and heat-sensitive.

The first time I saw one demonstrated, at a trade show, the demonstrator had a skillet that had been cut in half.  He put the skillet on the burner, turned on the heat and when the skilled was hot, broke an egg onto it so half was on the skillet, half on the bare burner.
Only the part of the egg on the skillet cooked while the other half remained raw. 
This was to demonstrate that the burner itself did not get hot, only the metal.

You can get magnetic metal "interface disc" that will allow you to use non-magnetic cookware on the burner. 
I have one and use my stovetop Corningware or pottery cookware ( tagines, cazuelas, etc.,) on the induction burner.
