Potato Dough for Savory Mini Tarts (with photo)

Ingredients:
200g potatoes, cut into pieces
500g water (to steam)
200g flour
125g butter, cut into pieces
1 tsp salt

Filling:
Cheese Mousse
Pepper Salsa
Or some other cheese / vegetable combinations as you wish

Preparation:

    Put water in TM Bowl, insert Steaming Basket.
    Place potatoes in Steaming Basket, close TM Lid, place Measuring Cup, steam for 20-25 minutes at Varoma Temperature on Speed 2.

    Set potatoes aside. Empty TM Bowl, rinse with cold water so that it would cool.
    Put 200g steamed potatoes in TM Bowl. Puree for 30 seconds on Speed 3.
    Sift in flour.
    Add salt and butter. Knead for 2,5 minutes.

    Wrap dough with plastic film. Refrigerate for half an hour.
    Grease and flour your mini tart pans.
    Get pieces from the dough. Roll out with a rolling pin. Place in the tart pin. (I obtain 10-11 mini pies in total)

    Flour the bottom of one tart pin. As in the photo place it over the dough, press lightly, remove it, remove the excess dough.
    Poke holes using a fork.
    Cover with baking paper, place baking paper and beans.
    Bake in preheated oven at 200ºC for 10 minutes.
    Remove beans and baking paper, bake for 5 minutes. (I baked an extra 10 minutes until they were a bit browned. Try not to over-bake tough to prevent it from hardening to much)

    When cooled, remove them gently.

- Fill them as you wish. I used the Cheese Mousse and Pepper Salsa . It turned to be a great combination for our taste! I'd highly recommend. I filled a few with only pepper salsa, few with only cheese mousse and the rest with both. If you are going to prepare them just to fill these mini tarts, of course you'll have plenty of Cheese Mousse and Pepper Salsa left however I believe they will be consumed very fast, firstly because they would have a wide range of use, and secondly they taste so good! ;)

- The savory mini tarts are delicious also the day after.

- You can fill them with some other cheese and vegetable combination as you desire.

Interesting recipe farfallina, I've never seen a potato pastry base like that before. Obviously you eat them cold and don't need to warm them at all?

Yes judy, I serve them cold.
Filling is cold as well.
I used potato for several doughs before but with a lower percentage, not 50-50 as in here
You don't taste potatoes though, well, at least I didn't  :D

I found this recipe very practical, because they could be prepared the day before.
I prepared&baked mini tarts and then, the day after i filled them with the filling I preferred/had
So far I used cheese mousse, pepper salsa and mushrooms for filling. We really loved the result
Since I made them for the first time to serve in our Valentine's dinner, I made them 4 times in 10 days! Whenever I got the chance. We also had quite a few guests recently :)

Farfallina have you ever tried freezing the cases?? Im planning a bday party for 35 and need things i can make ahead and freeze??

sorry for my bad english  :)

Frozzie I didn't try freezing them.
I prepared them the day before
I saw that even after 2 days passed they tasted great
If you will prepare before, I would recommend you to fill them the day you'll serve. it is not a must but i prefer that way.
If you are going to prepare the same fillings as I did, you could prepare the fillings as well several days before with no problem
I am sorry I can't give you a specific answer about freezing, I believe you could but since I haven't ever tried myself I wouldn't like to say something wrong.

If you need a few ideas as dessert..
Chocolate Souffle is great to prepare the days before and keep it ready in the freezer. I had some guests recently, I had a dessert which included nuts but someone was allergic. Thanks God I had some in the freezer so they saved me.

You can try cheesecakes..

Helene's chocolate salami also is something that could be prepared in advance.

Thanks for the reply and ideas farfallna.. No ive past the 35 mark by just a bit.. 😝. Its for 35 people for a surprise 30th birthday for a girlfriend... 🎉

If i can prepare them a few days ahead thats great.. I just need to do as much as i can in advance as so much to do jour j or d day in english

By the way your english is fantastic.. My dh says that alot.. Sorry for my english or my English isnt fantastic.. I just laugh and say yeah right there is nothing wrong with it!!
