This is a very quick fix cake batter and GD had no trouble making these at all.  I did find they needed an extra 10 minutes cooking time though - maybe I had them too low in the oven.  When they were cold I removed one from it's patty case and found all the raspberries had settled on the bottom and it was very moist down there.  Instead of icing the tops, I decided we would remove them all, turn them upside down and ice the part where the raspberries were sitting.  Had to spoon a lot of that out of the patty cases and put back onto the cakes but they held together well and the butter icing covered any mistakes.
Not sure if you are supposed to keep anything covered in butter icing in the fridge during this hot weather but they go very hard in the fridge and have to be left at room temperature for a while to be enjoyed. DD had one when she returned to collect GD and she thought they were nice but I wasn't that happy with them and would love to know how others go with this recipe.

I made these a while back from a recipe I converted. They were ok but I definitely have had nicer. Probably wouldn't make again or would make some changes.

Wow just made these and we all agree, the yummiest cupcakes I have ever made!  The icing, which I made as per recipe is delicious and not grainy at all, is the crowning glory of the beautiful cakes.  I will certainly make these again, I would only make 1/2 the icing next time as the recipe makes heaps.
