Sweet Muffin Buns. I made them as Hot Cross MuffinsMakes 9-12Ingredients450g bread flour
½ teaspoon salt
50g butter
2 teaspoons dry yeast
2 teaspoons mixed spice
50g castor sugar
zest of one lemon
275ml milk
2 eggs
200g mixed dried fruits
PreparationPlace eggs, milk and sugar into the bowl. Speed 4, 10 seconds.
Add the yeast, 2minutes, speed 1 at 37 degrees.
Add all the other ingredients and
for 2 minutes. This is a VERY sloppy dough.
Set aside to rise until double.
Stir the dough down and beat in the dried fruits with a wooden spoon. It is very easy.
Line muffin tins with large papers. (see in the photo)
Put about ½ cup of mixture into each muffin tin.
Turn oven to 200 degrees.
Leave to rise about 30-60 minutes, depending on the weather.
Cook at 200 degrees for 30-45 minutes.
