Thank you everyone I will keep it in the fridge and see how it goes. I have just brought a vacuum seal machine so I might try that to.

That looks delicious, and so much cheaper than the bought variety (sorry Maggie!). I just discovered the most delicious locally made biodynamic blue cheese, and I think that quince paste would be the perfect thing to partner with it.

Quince paste was $6 plus in DJ yesterday. Well worth making as it stores very well out of the fridge. I vacuum sealed some and set some in small plastic containers. Both still good after 12 months.. Consider adding some to Middle Eastern Tagines.

Oh man, I think I must have not quite added enough sugar. This tastes divine, but has not set hard enough to cut into cubes. Maybe I need to freeze a little so I can cut and remove, and just have a lovely thick cube???

Does it need more boiling to boil off a bit more liquid? I'm expecting to get some quinces any day so will be making some. The last lot I made was delicious.

Yeah, I think that would have done it. It's thick enough to hold its shape, I think next time I'll just make sure I se them in muffin trays so they are already individual and maybe do a tad longer.
