Name of Recipe:  Vinagreta – not tested

Serves:  Makes 250g

Ingredients: 
200g extra virgin olive oil
50g Sherry vinegar
Salt

Preparation: 
Put the ingredients in the  *: and emulsify 25 seconds / Speed 5-6

 Tips/Hints:  If you want a flavoured vinaigrette add flavours as desired:  dill, basil, coriander, tarragon, hazlenuts etc.  First crush at Speed 7 and then emulsify at Speed 5-6 for a few seconds.

Origin:  This is a translation of a recipe in Thermomix TM31 – Imprescindible para tu cocina which is the book supplied with Spanish TMXs.

I wonder how long this would keep in the fridge.  I usually mix my vinaigrettes as needed but it would be great if you could do a reasonable quantity like this for the summer months.

i think :-)) all summer in the fridge JD, nothing really that can go off.
i don't need a recipe i'm italian

Gosh, yes, it will keep for ages in the fridge.  Sometimes, the oil can solidify if your fridge is as cold as mine, but all you need to do is take it out some time before you want to use it and then give it a jolly good shake.

Yup and you can keep it going by adding more of this and that as it gets low. I think I started  my last squeeze bottle about two years ago. It never runs out.
