Condensed Milk

Would anyone have the recipe on how to make condensed milk or was someone else referring to the caramel milk that is already on here?  Thanks Sandy

There was a recipe in the Budget Busters section on the Australian Thermomix website recently but it uses powdered milk which I thought was a no-no.

I tried making that condensed milk and it was okaaay, but once it had been in the fridge it went hard and powdery and I wouldn't recommend it.

I also would love to know how to make condensed milk as we LURVE the ice cream made from condensed milk and would love to have it as "pure" as possible.

Most of the condensed milk recipes are going to contain milk powder of some sort - easier.

Sandy may want to try just slowly simmering a big pot of milk on the stove (especially if you have slow combustion stove) in a wide based pot, then add some sugar near the end of thickening.  Best to have a simmer mat underneath to reduce sticking/browning.

Sweetened Condensed milk.  I  don't know where I got this recipe, hope it helps

6 cups Whole milk
1/2 vanilla bean
4 1/2 cups sugar

Heat the milk and sugar in a heavy saucepan over medium-low heat with the vanilla bean, which has been split lenghthwise, scraped with the back edge of a knife and added to the milk--pod and all.

When the sugar is dissolved, raise the heat to medium-high and hold between a simmer and a boil, stirring occasionally, for about an hour. be sure the milk doesn't stick to the pan. The milk will thicken, turn beige and darken to light tan.

Strain into a bowl and cool. The "condensed" milk will have reduced to 4 1/2 cups. It will keep several weeks covered in the fridge.

Use in equal amounts in recipes that use condensed milk.


I haven't tried this recipe yet but it sound easy to make, don't know how it would go in the TMX but will give it a try  :)

Has anyone tried this?  I've got a couple of favourite recipes that require sweetened condensed milk.

Hey guys, is this not dulce de leche?????? but maybe without the cream added, if we cook it for less time, surely it will not be a thick as the caramel dulce de leche. Maybe somebody (who isnt on a diet  (like moi) can try it out....) without the cream and half the cooking time? Who is skinny? Come on guys..... lovely in coffee!

I found this recipe for condensed milk.
It looks like it would be very easy to convert to Thermo cooking and even uses part substitutions of Splenda or Xylyitol in the mixture.
