Is cornflour and maize flour the same thing?

Since we really enjoyed the Bible bread I made the other day, I thought I would buy all of the ingredients I need. I have found soya flour but not maize flour on the 2brothersalmonds.com site. So I'm wondering if conflour is the same thing as it is made from maize?

Corn flour tends to be much finer than maize flour. You should be able to use polenta instead of maize flour if you can't find it..

I would use polenta too just grind it a bit finer if you want it like flour.

Some corn flour is actually made from wheat I discovered so check the packet when buying.

I have the White Wings Cornflour which says on the ingredients: Maize cornflour. Can I not use that instead of having to buy something else, otherwise I will just leave it out I think.

If the recipe says maize flour I wouldnt substitute with maize cornflour. If you have any polenta, just crank up the TM to speed 9 and make your own maize flour.

corn flour is the starch (also known as cornstarch in the states I think it is) - different process to get it (the same for wheaten corn flour, it is the starch) so no not interchangeable in this case  ;)

Faffa's right- maize cornflour is definitely not maize flour. You would get two totally different results with your baking if you interchanged them!

If I wanted to buy it, where would I find it? Health food shop?

I don't have polenta either.

Might just leave it out but out of curiosity, what difference would it make to the bread?

Depends how much is needed in the recipe- it might be there to give the bread density and texture so without knowing the specific recipe, I'm not sure if you could leave it out or not. You can buy polenta at any supermarket and if you specifically want maize flour I have seen it in the health food section of supermarkets but you should be able to buy it in any good deli also. Health food stores may or may not stock it depending on how big they are and the demand they have for it.

I only need 1 tablespoon for each loaf.

If it's  the same recipe that I am thinking of then I think you could easily leave it out. Besides, the fun part is experimenting so even if you make it without and you don't  like it then you'll know for next time!

NO.........I once thought the same thing and the difference is absolutely huge.  Nothing substitutes for cornflour. I made a basic cheese sauce which is something I have done for years and for the first time I substituted polenta (ground corn) for corn flour.  What a disaster...it was totally inedible and had to be thrown out.

I have gone back to buying basic cornflour. :(

Great, we dont have corn flour in belgium and i was wondering if usng thermomix to grind pole ta would work.. Tnx alot
