Hp sauce

Here is my version of hp sauce.. A totally different approach, but (so i hear) very close to the original..

1kilo apples for cooking
350 gr dried prunes
1 union
2 cloves of garlic
1.5 TBS coarse sea salt
100 gr cane sugar
100 gr dark brown sugar
500 ml apple vinegar
1.5 cm ginger, grated
1 small ts of Jamaica pepper (all spice) crushed
1 small ts of nutmeg, grated
1/2 ts cayenne pepper
Tamarind pulp

Skin apples, remove pits from prunes, cut unions and garlic to size
Put everything in the tmx and let cook for 40 minutes , first on varoma then on 100 , speed 2
Then mix on 1-10 for 1 min and sift ..  Check the consistency and Ely reduce further if necessary with basket on top instead of mc

Put the sauce in sterile bottles and put in dark cool space.. Shell life when. Unopened 2 years, after opening in fridge ... Gone in a few weeks beaus to good to leave it unused

Thanks, Stef, that looks like a good version of HP sauce, will give it a go after I use up the current batch.

For sure give it a try.. U may add a bit more cayenne for extra kick though..  Sinve i made this i cant go without it lol

When you say apple vinegar, do you mean apple cider vinegar?  Also, how much tamarind pulp do you suggest?

Do you cook 40 minutes on varoma then down to 100 speed 2 - for how long?

Hey culdith.. I start it of at varoma temp for 20 minutes and then bring it down to 100 for another 20 minutes.. As for the tamarind, i use about 75 grams

I forgot the vinegar.. It is indeed aplle cider vinegar!

We find them here in supermarkets, plums or prunes..  if you have them without pits, then you will be done faster then me making this lol

Just opened another jar that was in the cellar for months...  Despite the humidity here the last few months the flavor only gets deeper and more complex..

It sounds amazing. That's what I need, a cellar for storage.  Probably no chance now the house is here, I think it may fall in if we tried.
May all dairy items in your fridge be of questionable vintage.

I think you can use 350 gr of prunes or plumbs without stones (about 500 gr with stones)

Hey JB, i used 200 gr deseaded, half dried pulp, so i guess completely dried
 60 to 70 grams

Have fun.. If you like spice add a bit of the habanero sauce!
