Just made this in a pie dish and its in the oven just now. It filled the dish to the top but seems quite runny so I hope it sets  ???
Smells really yummy  :)

I've prepared this to cook for dinner tonight. I added 1 tsp coconut essence to the rice, it smells lovely :) Coconut with curry is really yummy so I hope it tastes as good as I'm expecting it to ;D

Amy that sounds a brilliant tweak!  Please let's know how it turns out. I agree, coconut and curry are just born to be together . .  ;D ;D

Well GF, it was a sure success! The coconut flavour comes through as a silky smooth and subtle aftertaste. Its just lovely. I would encourage others to try it too :D

Bummer CC.
It's a favourite in our house too. Also nice as a pasta bake.
Will try the coconut essence too Amy. Clever tweak :)

Has anyone used brown rice?
Want to make this for friends quick supper tomorrow. Got left over chicken, might have mushrooms.
If not will do tuna and put cheese on theirs not mine.
Thanks CC for the idea.
Lemon feather cake for dessert, guests are wheat or gluten free.
