CC that looks great. Do you find this cake peaks in the middle? I still struggle every time I make it, no matter waht tin or what I do.

Lovely lady CC, your friend will definitely be lifted by your thoughtfulness.
I am planning on making this recipe for Mum's birthday cake for the weekend. Last night I read through the whole thread taking on board all the suggestions and ideas.

Judy if your Mum like chocolate cake she will love this one. I don't eat it but DH and DS love it. As i've said before the only problem I have it with it peaking so tend to make it into cup cakes now or use a tin with the whole in the middle. Enjoy

Thanks girls.
My cake did rise slightly in the middle Wonder but sunk back on cooling.I only 3/4 filled each tin and cooked 3 cupcakes as well.

I made 21/2 times the mixture on the weekend in two separate batches. I was trying to make them in a lamington hoping if kept the cakes thin they wouldn't peak. The first time I didn't have quite enough batter to make two the same size so I made a batch of 11/2 times the recipe and that made two lamington size slabs which I will join together with buttercream before icing as the graduation cake for DS's grade 6 year level celebration on Sunday. I've frozen each of the slabs individually and will defrost on Sunday morning before icing.

I made this into toblerone cupcakes, just whizzed up my chocolate and continued with the recipe omitting the cocoa, very yummy

Made a 1/2 batch of this today and made little cupcakes. They are yummy. I've whipped up a batch of the creamy vanilla frosting as well so will attempt to ice them before taking them along to our bushwalking supper tonight (hope the icing survives as it is still pretty hot outside).
