Recipe Review Tikka Paste Pge 17 Fast & Easy Indian Cooking
« on: September 06, 2012, 08:41:20 am »
This was a review made by Sassafrass 30/7/11 and copied here from another posting

Tikka Paste
I halved this recipe (didn't have enough coriander seeds for whole).  It made 1 whole jar (jam size) + 90g for 1st use.  the paste is DELICIOUS.  Mild enough for young children, but has a slight bite.

I make this all the time and we love it. It's great for chicken, beef and I've even done it with pander

You've done it with pander?  Surely you don't mean panda?

Can't say I've tried it with pander OR panda  ??? ???
But I do have a jar of it in my fridge all the time. I put a good layer of oil on top and it will last forever. Someone told me they freeze it into ice cubes, when frozen put them into zip lock bags and then take out however many they need for the recipe.

Oops sorry. I try to remember to re read what the iPad writes as I think it has a mind of its own.  I meant Paneer. It's nice with the curry paste.

Oh thank goodness for that cookie1! Although I must admit I was thinking all afternoon - geeze I wonder what cookie1 was talking about when she wrote pander. I came up with a lot of different ideas - but none of them paneer!
Must try it though - I love paneer.

An excellent paste.  Very easy to prepare.  I wasn't overly excited by the butter chicken that I originally made the paste for though - nothing wrong with it, but nothing special.  The second time I used the paste tandoori style, mixing a few tablespoons of paste with Greek yoghurt, then marinating flat chicken breast slices.  I roasted the pieces & we ate them as a burger with mango chutney & salad :) very tasty & quick.

Can anyone tell me if you use the whole coriander bunch (roots, stems and leaves) or just the leaves for this?

I use the whole thing as the stalks have more flavour than the leaves.

Thanks. That's what I did - looked up the recipe on the UK tmx site and it says to use the whole thing :)

I used this paste yesterday mixed with cream. Chicken thighs with bone in were on special so marinated overnight, cooked in oven today. Took the chicken pieces out, didnt  use the sauce as it was very oily,  but the chicken was absolutely delicious.

We all loved it. Very quick & easy if you have the paste on hand.

Thanks Hally, will try that next time I cook up a batch of thighs in the weber - can only get thighs with no bone at my shopping centre though.
