I have 10 kilo of carrots - obviously will need to make some items that can be frozen
Apart from carrot cake, which only uses a few - I'd love some thermi suggestions for recipes or ideas that will help use up my amazing amount of carrots - can you help?

Carrot soup, lots of thermomix recipes for this.
Carrot cake - my favourite is
this
one.
Carrot Halwa from the Indian cookbook - I wasn't that keen on it as is although others like it - I did turn it into a carrot slice though and that was great. You could make the mixture and freeze until needed. I haven't got my Indian book at the moment, it has never come back from DD's place otherwise I would give you the recipe.
Carrot & Orange juice from the EDC - I use 2 carrots, 3 oranges, 1-3 tspns sugar, 200g water & a tray of ice.

Can second all of the above and it was also suggested that I make sofrito to freeze . . .Good luck!!

judydawn - carrot and lemon marmalade sounds awesome! I don;t yet have any thermi books other than those I got with delivery. Do you recommend them? The Indian one sounds as if it could be very useful to a big foodie like me?

Have yiu googled how to freeze then, you obviously can as you can buy pkts of frozen carrots

I love Vietnamese pickled carrots. Very delicious in salads, rolls for lunch etc. You basically grate the carrots and soak in a solution of vinegar, sugar and water. Luke Nguyen"s recipe from the Secrets of the Red Lantern cookbook. I can't find my oopy at present but could source the recipe if anyone"s interested.

Thanks GF. We have just moved houses so lots still in boxes. I really love the pickled veggies and banana cake recipes in the book. Have you tried these?

Not yet . . . it's a gorgeous book. The recipes notwithstanding, the story of his family fleeing Vietnam and coming to Australia for me was incredible. I'll pm you the carrots if you like . ..
