I don't think I actually used the leek and cheese soup mix... I think I just added some parmesan to give a little bit a cheesy flavour ;)

Sounds like they're perfect for lunch boxes, thank you for sharing! Do you reckon I could sub leek & potato soup with 1 Tbsp of vege stock paste and perhaps a cup of grated parmesan?

Dhitri, I think 1 cup of parmesan may be a bit much because it does have a very strong flavour... perhaps 1/2 cup?

The recipe is fairly forgiving, so I think as long as the quantities are the same, a substitute is fine  :)

Using veg stock concentrate instead of leek soup package and subs panko bread crumb for breadcrumbs. DD loves this a lot, perfect for vacation care lunch box.Thank you, Mich!
