What about the veg sausage rolls or pasties (vegetarian) or spinach feta triangles, patties are good .. Can vary veggies and nuts and spices really whatever..

You could also search online.. Lots of options

Tenina has a vegetarian lasagne in for foods sake which has got excellent reviews.  Yotam Ottolenghli publishes a lot of really nice vegetarian recipes via The Guardian Newspaper website (or his book "Plenty" if you have it).

I love Quirky Jo's lentil Bolognese and Michelle Bridges Cottage Pie recipe that uses cauliflower mash instead of potato for the topping. So low in carbs too.

The Zucchini & Rice pie is very nice.  My non TMX friend loves this and makes it by just grating the veg.  She adds grated carrot and mushrooms sometimes.

I saw Quirky Jo's lentil bolognese mentioned on this thread, so I made it yesterday for tonight's dinner.
A really fast, easy, tasty recipe.  The only change I made was to add a chilli and some cayenne pepper to make it hot and spicy.

My DH and I both enjoyed it. 
We're trying for a couple of vegetarian dishes every week too.

Good on you. My boys are not impressed, this week 1 only as last week we had a lot of left overs of a veg pasta dish.

My all time favourite is Quirky Jo's Chicken and Cashew Vegetables with Coconut Satay Sauce - except I use tofu instead of the Chicken but, if you don't like tofu, I think you could easily use a white bean, i.e. butter beans or lima beans.

Basically, if I see a meat based recipe I fancy, I just drop out the meat and adapt it, often with extra seasonings, spices, etc.  The Revive Cafe books from Auckland are full of excellent, easy to make recipes.  I got this list from their newletter which I recieved yesterday:

Here is the international "cheat sheet" that I use to help match healthy ingredients and flavours to different regions:

•   Chinese: Rice, Noodles, Tofu, Asian Greens, Adzuki Beans, Cabbage.  Flavourings: Soy Sauce, Sesame Oil, Miso, Sesame Seeds, Garlic, Ginger.
•   Thai: Rice, Noodles, Coconut Cream, Bamboo Shoots, Bean Sprouts,  Flavours: 5 Curry Pastes (Green, Red, Yellow, Penang, Massaman), Lemongrass, , Kaffir Lime, Lime, Peanuts, Ginger, Fresh Coriander.
•   Mediterranean: Eggplant, Courgettes, Sundried Tomatoes, Capsicum, Tomatoes, White Beans, Puy Lentils.  Flavours: Smoked Paprika, Mixed Dried Herbs, Olives, Garlic, Fresh Parsley, Fresh Basil, Fresh Oregano, Seeded Mustard, Balsamic Vinegar.
•   Middle Eastern: Chickpeas, Tabouhli,  Flavours: Cumin, Coriander, Smoked Paprika, Nutmeg, Sumac, Aniseed, Dates, Apricots.
•   Mexican: Corn Chips, Burritos, Tacos, Red Beans, Black Beans, Chillies, Avocado, Quinoa.  Flavours: Chilli, Cinnamon, Cloves, Cajun Spice, .
•   Indian: Rice, Spinach, Tofu, Lentils, Cauliflower.  Flavours: Indian Curry Pastes, Curry Powder, Cumin, Coriander, Fenugreek, Fennel Seeds, Cardamon, Garam Masala, Black/Brown Mustard Seeds, Chilli Powder, Turmeric, Ginger, Fresh Coriander.

There are obviously many cross overs and exceptions to the above but it is a good start for menu planning.  Use this list if you have a particular ingredient or want to cook a particular style.


You will already be using a lot of these combinations in your everyday cooking anyway without necessarily realising or thinking about it.

Another (non TMX) favourite, is my Cashew Nut Curry.  Quirky Jo's blog is also one of my favourite sources of recipes.  I am often asked what I eat (as a vegetarian) and the answer is very simple - I eat everything except meat!  Don't think of it is a hurdle or deprivation, just think of it as opening up a whole new range of foods and recipes for the family.

I tend to make different things every day as there's so much to cook! One recipe I make a lot is Lentil Loaf. I'll try and convert the recipe for the Thermie and post it.
