isi's bread recipes

I made isi's Portuguese rolls as a  loaf on the weekend and it turned out great!!!  I've noticed she also has a 'very  normal bread'  recipe.

 for those of you who have made both,  can you tell me the difference?  Do they taste different?  I'm wondering whether I should give the very normal bread a go or just stick to the Portuguese rolls recipe.

I haven't made either for a while Romina as there are so many bread recipes on here now to try.  Isi was the person who's recipes were the first I had success with before Chookie joined and started posting her delicious recipes too.  If it was me, I would be trying as many different recipes as I could, variety is the spice of life.

I agree with Judy,  you need to try many different recipes and decide what you like.  All part of the TMX learning experience.

I love making lots of different bread recipes. At the moment our everyday bread is Chookie's No Fuss Roll recipe. I love making rye breads too and there are some lovely fruit loaves on here.
Have fun trying all the different recipes.
May all dairy items in your fridge be of questionable vintage.

 Thanks for your feedback! Oh and I do have the no fuss rolls recipe on my list to try... after reading through the 50 odd  pages today  :-)  thanks chookie, I've made a list of your tips!

Romina, you won't go wrong if you follow Chookie's tips. She's our bread making queen and isi is our inspiration, too.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

 Thanks! I  couldn't believe how much she knows about bread as I was writing all her tips  down!  how lucky to have someone like her on this forum!!

I have been promising myself for a long, long time to make one of Isi's bread recipes and I have just made one of them - unfortunately I didn't note down on my page which one it was and I am kicking myself now - I've just called it "Isi's Portuguese Bread", but I haven't been able to find the equivalent recipe anywhere on here!  Anyway, it turned out beautifully - it is probably just a basic loaf but I put in 60 gm rye flour, 20 gm sunflower seeds and 20 gm pumpkin seeds then used molasses instead of honey.  It turned out to be a delicious loaf and I am really happy with it.

Thanks, GF, the bread rolls aren't the same recipe I used, but it is very close - the adaptation I used may have come up at some stage in the thread, but I didn't read it thoroughly today so don't know for sure.  The one I used was this one (including my mistakes!):

500 g flour (I used 60g rye flour as I had some left, plus 20g pumpkin seeds, 20 g sunflower seeds and 400 g bakers flour)
25 g granulated yeast
300 g lukewarm water
1 1/2 tsp salt
1 tbs honey (or molasses - I used molasses)
1 tbs olive oil mixed with 1 tbs water

Put everything except the oil / water mix into the TMX and knead for 5 minutes.

Leave MC in place and allow dough to rise in jug for 45 minutes.

Knead for 1 minute (I kneaded for 1 minute plus two extra kneading cycles, c. 10 - 12 seconds longer).

Turn oven on to heat to 200 C.

Turn onto floured surface and shape into one loaf.

Place into parchment lined loaf tin or baking sheet and let rise for c. 20 minutes (it will double in size).

Make thin slices on top (no idea how to do this, I just ended up with a mucky 'slash').  You are also meant to brush with the olive oil / water mixture at this point, but I forgot and didn't do this until I put the loaf into the oven.

Place ovenproof container in oven with water - I didn't do this either, but I did spray mist the oven and oven door with water as well as the top of the loaf itself, immediately on putting the loaf into the oven (after brushing with the water / oil mixture).

Bake for 25 - 30 minutes.

Marina,  it doesn't matter that you didn't stick to the recipe,  as long as the result is good. 
I think the recipe that others are looking for May be Isi's Everyday bread. There is also one with leftover potato .  Both are good.
