I made these yesterday they tended to fall apart a bit as it turned them four times, the last half I added an egg and a little rice flour to,the mixture it is so much better held the shape beautifully.  Nice taste ate four in a row.  Piggy piggy.

Amy why not just grate a small amount of sweet potato and add it to one of the hash browns just before you shape and cook it. That way it won't get the first cooking. If it works then you will know for the rest.

Great idea cookie :D :D :D Thank you!!! xx

After all that, I had no sweet potato >:(

But they were really good, I made hash brown "stacks" with baked beans and eggs!
Thanks for a yummy, easy recipe Meg! :D :D :D :D :D

Aussie Brenda, I only turn them once for that reason! Good idea adding the egg and rice flour.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
