I bought 2 of the 9kg double ones from this seller Obbie. They have two seperate trays which sit inside the water bath tray. We tried them with Ethanol from Bunnings in the burners and they kept very warm for the 45 mintues we had them alight. My only concern is the outside seemed to get very hot so I'll need to make sure we have them on a heat proof mat on the table and check that the handles don't get too hot. Otherwise for the $119 I'm very happy with the purchase and I'm sure we will get use out of them over the years. I really liked the look of the fancier ones from Costco but they would have worked out to about double the price to hold the same amount of food. Cost over looks one out this time around.

One thing never to do is put rice in a Bain Marie for any length of time unless you can control the temp. Keep a cooking thermometer handy to check to temp of the food for safety's sake.

Hmmm not too bad. I really have to write a list this afternoon of everything I need to do each night and then a step by step outline for Friday. I keep adding new things that I would like so need to stop that or it will just get out of hand. We have more family coming than we anticipated so will need a little more food and some nibbles at the start. but all going good at this stage.
