Whats your 3 Favourite Ice Cream recipes?

I need to fill up 3 empty ice cream containers. My first fave is Salted Caramel Maple, Turkish Delight, Tenina's I Scream.

I've yet to find the perfect vanilla ice cream, and a strawberry or wildberry ice cream recipe.

What are your go to recipes, and where do we find them?

CP, this is the one I use for vanilla ice cream, though I might just reduce the sugar by 20g next time as these days lots of things seem to taste really sweet to me (that didn't before), otherwise it's my go to one for vanilla. It does use 6 yolks if you are okay with that.
Also, if you don't have vanilla pods, just use 1 tsp vanilla bean paste, I do that sometimes too.  :)

LUXURY VANILLA GELATO from 500 ice cream book
300ml whole milk
1 vanilla pod, split in half, seeds scraped into the milk
6 egg yolks
100g caster sugar
300g thickened cream

Heat the milk and vanilla bean seeds and pod in a saucepan on the stovetop until it reaches scalding point.  Remove from the heat and set aside for 10 mins to steep.

Meanwhile, If you need to make caster sugar do so now.  Place sugar into TM bowl. 
Mill 3 secs/speed 9.  Leave in the bowl and scrape down sides.

Add butterfly to bowl and add yolks.
Beat 4 min/37°C/speed 3. MC off  (should be thick enough to coat the back of a wooden spoon). 
Remove butterfly.

Remove vanilla pods from milk onto a plate.  Remove any seeds left in there with the tip of a knife and add back into the milk.  Discard pods (or dry and use for something else).

Weigh the cream into the TM bowl and set for 5 min/80°C/speed 5.
Once blades start turning, pour the warm milk mixture through opening in the lid.  You may then need to put MC on a slant to stop splashes.

If you like you can pour through a fine sieve (to catch any bits of egg white) into a jug but I never seem to find any bits in mine.
Cover jug and refrigerate until vey cold.
Churn in an ice cream maker.

My favourite vanilla icecream is the Turkish delight icecream with the first 4ingredients. It's my DS's favourite icecream, and sometimes I add other things to it - for Christmas I added melted choc swirled through and chunks of salted caramel nougat.

My favourite fruit based icecream is my passionfruit  & yoghurt icecream

Choc chip icecream, using the basic EDC recipe with cacao powder added to the custard and choc chips added while churning.

The kids love rapadura icecream, which is the EDC recipe for vanilla icecream made with rapadura sugar, which gives a lovely soft caramel flavour.

I am a lazy bones CP and I mostly use the condensed milk and cream as my icecream. The family like it and I add whatever we like to it. I have added crushed mango and mango vodka, ferreo roche crushed up, failed thin jam, rum and raisin, crio bru grounds, stewed plums pureed. I just throw the condensed milk and cream into the  *:. Whip it until it is getting thick and use the icecream machine. I add the flavouring toward the end or if it is fruit puree etc I add it in the  *:

We also love the peanut butter icecream and enjoyed the hokey pokey one too.  Ooh and the Cherry icecream .

I think we like all icecream. :D :D :D

And I just realised I can't count to three. :-\ :-\ ;D
May all dairy items in your fridge be of questionable vintage.

Some very kind person from the forum sent me some wattleseeds at Christmas (thankyou  :-*) where is the recipe for the ice cream? Does it taste peppery?

No not peppery. Caramel maple syrup coffee like. It's my review of the EDC icecream recipe. Add one tablespoon of wattleseeds at the start of the recipe in lieu of the vanilla. Continue with EDC recipe.

Couldn't find any green food colouring in my pantry and was going to can the idea tonight until I had a light bulb moment back from primary school that blue + yellow =GREEN (yes sheer brilliance and a standing ovation) Peppermint is in the fridge cooling overnight. Now making the Salted Caramel Maple. Oopsie about 1/3 of the cream that I had on hand in the fridge had expired 17 Dec, so I've just had a Gerty moment and smelt it and it doesn't smell too bad and we have to heat the cream/milk mixture so dammit I'm using it so it doesn't go to waste. I may be MIA from the forum for a couple of days but I'm sure I'll come back  ;D

I'm going to halve a Nigella Strawberry Icecream recipe cos it uses 10 egg yolks and wouldn't fit in my containers, so I'll convert and post up. I'm sure it will be nice cos her pics look very creamy. I've also remembered whilst I've been trying to find a good recipe that the chocolate icecream recipe from the Fast & Easy book is also delicious. The F&E is a brilliant book, no frills but tasty recipes.

I must make ice cream, havent made any this summer. I think its because we eat way tooo much of it :)

Next week I will get machine out from alfresco kitchen, its heavy which is another reason its not getting used.

Cookie, how do you reduce the sweetness of the condense milk vanilla icecream? It's yum but too sweet for us.

Our ice cream containers are also empty at the moment so will need to make some on the weekend. Maybe a voilet crumble for DS and coffee for DH. A friend at work also gave me this cassata ricotta recipe which I'll have to try soon but not sure if my lot would eat it, but I think I would like it.

375g fresh ricotta (100%)
145g milk or 100g milk + 45g cream (39%)
120g caster sugar (32%)
zest of half a lemon
pinch of salt if ricotta is unsalted
½ tspn vanilla essence
Options (1/3 tspn)
.4g guar gum (.13%)
.4g xantham gum (.13%)
Diced soft candied fruits (limes, orange, figs, cherries).  Maria's deli in north carlton on Nicholson st has good selection.   
If making cassata reserve 10g of sugar.  Toss finely diced candied fruit in the reserved 10g of sugar to prevent clumping when added at "add add-ins bell"
Directions

1. Put all ingredients apart from options into blender.  Wizz and then sprinkle options into vortex.

 2. Spin it in the ice cream machine set to hard gelato

3. Add peel if using near end of cycle

I love anything coffee flavoured, also hazelnut or macadamia. Got my ICM 3 days ago, now have chocolate and egg-free strawberry icecream in the freezer which will keep us going for a while. In the meantime need to find recipes for MY favourites (now that the kids are sorted).
