Anyone have a great tired and tested recipe?  Gluten free even?  Or not...& I will play around with it?

Our recipe just ain't cutting it.

Marmee, there's a Nigella recipe for pancake mix which you make up the dry ingredients in a container and keep in the pantry and when you want to make some, you take out 1 cup of the mix and add to it the wet ingredients and make the pancakes.  It's the same as having those containers of instant pancake mix that you can buy in the supermarkets that you add water to but of course these have no nasties added and it makes nice pancakes.  Let me know if you'd like the recipe and I will post for you.  :)

JulieO - I'd love that recipe.  I am planning to do the bulk muffin mix as well, save time when you are busy.

Marmee here you go, have included the blueberry sauce part of her recipe too as it's really nice too to serve with them.

PANCAKES & BLUEBERRY SAUCE- Nigella

Basic Pancake Mix 
600g plain flour
50g baking powder
2 tsp bicarb of soda
1 tsp salt
50g caster sugar

Combine all ingredients and keep in a container for whenever pancakes are required.

To each cup of the pancake mix, add 1 egg, 1 cup milk and 1 tblsp melted butter.  Whisk to combine and remove any lumps.

Blueberry Sauce
200g blueberries (fresh or frozen)
125ml maple syrup

Place both ingredients in a saucepan, stir to combine and cook over medium heat until thick.

Make pancakes and spoon a little of the blueberry sauce on top and a small dollop of thickened cream.

Just found this recipe when wanting to make pancakes for breakfast - I was obviously too hungry to concentrate properly as I missed the part where the wet ingredients went with only *1 cup* of dry....

FYI, it takes more than three eggs, 75g of butter and lots of milk to fix this up when you stuffed it like me...

And I wondered my my kids reported my cooking as "crap compared to those Junior MasterChefs"....

Hee, hee Kerryn. My 5 yr old DS has said on more than one occasion that 'the Junior MasterChefs can cook much better than me, even though I'm MUCH older than them and they are only kids!!!!' But, after watching all the lovely dishes they have come up with, he is actually right  :)

I make wholegrain brown rice pancakes (gf & df) and they're beautifully light & fluffy!  Just need to remember to start the night before if you can.
