I use lattice biscuitsfor my vanilla slice, I will give the sao's a go. It sounds interesting.

I made alioop's version of this slice (using Cottee's vanilla pudding mix) and it is so easy & delicious. My icing was a bit thin looking and when I checked back on here, realised JulieO had a nice icing on her version that I could have followed but for special occasions i would probably buy the Orchard Icing.
I need to add - DH just had a piece after his lunch and said it was the best vanilla slice he has ever tasted

- and especially your DH too - they are sometimes a tad hard to please
!!
Best thing about it is it goes a long way cause you don't need much and gets yummier the longer you leave it!

What else does one do at 1am when sleep evades! Get up and use the thermie of course, (with DH away for weekend, there was just me and the, oh so quiet kitchen miracle! – but I know I am in understanding company!!!!!!)
The possibility of anyone needing another wonderful vanilla slice recipe is nought - however I will post the one I usually make which is very similar to Julie0's recipe but uses lattice biscuits. I used to make the vanilla pud.recipe all the time but prefer this one - given that thermie does all the work!!!!!!!!! Original recipe was from

Vanilla Slice
Ingredients
2 pkts lattice biscuits
2/3 cup custard powder
1/2 cup castor sugar
600ml light cream but full cream works
3 cups milk
2 tsps vanilla
2 tabsp gelatine
1/2 cup hot water
Method
Line base of papered lamington tray with 1pkt lattice biscuits.
Place all ingredients except gelatin and water in TMX cook 14mins, 100° speed 4.
Pour gelatin dissolved in hot water through lid of TMX and stir 1 min
Allow to cool – pour over biscuit base and top with remaining lattice biscuits.
Set slightly before icing - I used 2 cups icing sugar, 2 tabsp butter – mixed 40sec – speed 6 and added hot water until the right consistency, while I used pink colouring last night as I didn't have passionfruit.
I wasn't sure whether to post this in recipes or continue this thread.

I sometimes wish I could get up in the middle of the night and use myTMX johnro but all hell would break loose in this house. You wouldn't want to live in a block of units

JD as I was putting my comment re 1am cooking I was thinking th exact same thing - hope the hills around us don't echo - and I was thankful that we are not unit dwellers or the middle of the night rendevous with thermie could not occur.

I'm lucky so far, no trouble sleeping. Not long after we were married DH said I was like a chook with my sleeping habits, up with the sun and to bed with it.

You are so lucky Cookie - sigh! I used to be like that but have never recovered from the sleep deprivation of bub # 2. He had a disorder that meant he was wide awake after every 40 minute block of sleep both day and night. Apparently it can take years to recover from full-on sleep deprivation. At least I have this wonderful forum (and members on the other side of the world who are awake) for company.
