Sauce recipe request, try this for a challange

One of our favourite news dishes is the steamed snapper from EDC, however for the next few months I will not be able to eat that sauce due to diet restrictions.
What could I make in place of this sauce? (To go with either Salmon or Snapper)

It can't have the following ingredients:
Alcohol, sugar (of any kind, natural or artificial), tomato paste, vinegar, fruit. There are probably more things to list, but I can't remember right now.

Any ideas? Stock and water is a little bland. Help!

Sorry... forgot to say, no soy sauce or any other fermented foods... And I shouldn't have chilli much either LOL

Oh! And I forgot, I can't have any dairy, except butter and yoghurt. And I don't eat any meat, except fish.

steam it with some chopped dill or garlic chives and serve with a squeeze of lemon.

Sim,
You could make gravy out of the water left behind after steaming veggies etc, add a bit of veggie stock concentrate and cornflour to thicken. Cook on 100C for a few minutes at speed 4. we've used this before when I needed something over what ever we were having  ???.

i have no idea what snapper is like as i don't eat fish but what about doing what ILB suggested, but adding some star anise and ginger slices to the "stock" as it's cooking?
