Has anyone tried roasting the veggies &n then freezing them + the dough to compile the calzones later?  I generally do everything there & then from fresh because we don't have too much freezer space..............interested to know.

My theory was that I could prepare them and then freeze them uncooked, to cook straight from the freezer.  Does the theory sound correct?  I would never have thought of Calzone with sweet fillings, by the way - but once the idea was put in my head ... why not?!

Hoping to make some of these with the kids at the weekend.  Really MUST finalise the games/activities/food for DD's party.  Hope to goodness I'm not starting a bit of a meltdown after all  :(

I'd be confident of roasting and then freezing the veg - especially if you are going to reheat in calzone.

Tried these out over the weekend.  Very nice, easy and great for kids of all ages (aka adults too).

I turned the oven down as they were very brown on top, but still soft and spongy on the bottom, and cooked a little longer than suggested.  Looking forward to seeing how the frozen ones go too.  If good, I'll try and make lots for the freezer.

Talking of calzones have you all tried the one from the calendar???  Roasted vegetables on a pesto base with a bit of mozzarella & ricotta...........one of my favourite dinners. Yum Yum Yum

Could someone, anyone pleeeease post this recipe for me.  :D

i have found it - its in the 2009 calendar. here is Roasted Vegetable Calzone with Pesto Dressing  :)

Made these tonight with sundried tomato pesto, roasted pumpkin/zucchini/onion, salami, marinated goats cheese, mozzarella, baby spinach & mushroom........was yummy, and will make again!
I needed to cook them in my oven at  220c for 20 minutes.
