I'm baking this for a school cake stall tomorrow and thought I would bump it up - such a great recipe!

I made this on the weekend. We have a weetbix free house (yuk!), so I used 1/2 cup of the crumbs from the box of fruity bites cereal, and crushed 2 1/2 cups of cornflakes by hand. Delicious!

I made this yesterday to use up the weetbix crumbs. I didn't have the full amount of coconut, so added some sultanas and white chocolate chips.
I must have used too big a tray, as they are quite thin and crunchy, but delicious. I have called them biscuits and no one is any the wiser!  ;D

My four year old and I made these using leftover crumbs from the weetbix box. We topped with a simple chocolate icing. Lovely and very simple.

Miss7 has just got these in the oven now, we only had 3/4 cup of coconut left so that is all we used, also used nuttelex in place of the butter so miss5 can eat it too.  :)
:D

Made this again, and this time I had 2 weetbix leftover from a hotel brekky, so I threw in some oats and some bran to make up the difference. I used shredded coconut instead of dessicated, and MJ's suggestion of peppermint icing instead of chocolate. DS declared them DELICIOUS!

ES, looks great.  What is that sprinkled on top, I can't work it out?

I found three lonely Weetabix in my cupboard today and remembered this recipe ;D
The icing was a bit wet when I cut it into squares :-))

That was lucky in 2 ways Denise.  Firstly that you had enough weetabix and secondly, you remembered this recipe.
