Off to make this now. Been craving choc a bit and it's a hot day.

Mel, I use any cream in my icecream and never noticed a difference (usually the thickened as it's cheaper but often the regular).

I love my ice cream maker - think it was only about $20. The bowl lives in the freezer so it's always ready to go. I don't use it as much now I have a tmx and lots of other alternative desserts (my kids don't eat a lot of dairy and don't drink milk so we tend to have icecream or yoghurt for dessert - but since tmx there are puddings and mousses and custards as well as non dairy desserts).

OH this is so rich and decadent (I usually half milk, half cream for my ice cream) and I could eat the whole tub, lol.

This is fabulous! We ate it when it came out of th eicecream maker and it was a perfect chilled mousse. Delicious. Can't wait to try it again tomorrow after it has been in the freezer.

OMG - made this today using process from EDC, and it was simply the most creamy, decadent, delicious ice-cream I've ever had! I had no idea it could turn out so good without using an ice-cream maker.

Do you think that this recipe (without ice cream maker) would be OK for an ice cream cake? Seriously gearing up for party on Thursday and DS has decided he wants an ice cream cake. Was thinking to follow recipe in EDC as per Dyljon, but on return to freezer was going to put it into a springform pan to make it a circle. Not made ice cream before so have no idea if this is practical??? ie. will mixture run out of pan? will it be easy to get out of pan to serve/decorate?

Kerryn - I think it should be ok - it was quite firm in the end. Maybe do a test run just to make sure (good excuse to eat more of it!) ;)

Could you line your tin with glad wrap just in case it wanted to run out?

This is the ice-cream I made today and I used an old rectangular shaped tin which Mum used to set her ice-cream in.  Somehow I have managed to put knife cuts in the bottom of the very thin metal so I lined it with 2 layers of plastic wrap.  Licking the spoon and bowl has given me my first hints as to how delicious this ice-cream is going to be later when it sets fully.

Have just put the "cake" into the freezer. Very glad I did a test run today as the quantity isn't going to be enough so will have to do another batch - on the plus side, the reduced quantity meant I didn't taste test other than licking the bowl, and spoon, and spatula, and my fingers..... Might even put a strawberry layer in between - haven't searched for recipes yet but fingers crossed.
I have lined the tin with glad wrap so hopefully that wil do it.
