Yay, I finally got around to making the Sweet Chilli Sauce today.  Tastes sensational, although I only got to try a little.

I'm including a few bottles in christmas hampers.

I made an adapted version of the sweet chili sauce, and made belgizn home made chocolate pralines filled with the chili sauce.. Those, my friends , came out amazing, the sweet and sour against the bitter chocolate

For the sweet chili sauce, i refer to the recipe on the forum

The chocolate i late as follows

 250 grams cane sugar and one vanilla pod 1 minute speed 10, remove

500 gr cocoa butter pellets - 30 minutes (untill melted completely, check and use the spatula to bring it all together) 37 degreed, speed 2

Add sugar, put on 50 degrees for 10 minutes speed 2 then 20 minutes at 37 degrees speed 2

Add 400 grams of pure cocoa powder (not chocolate milk powder) and again 10 minutes, 50 degrees speed 2 then 20 minutes at 37 speed 3


Fill the chilled praline molds with the chocolate and let set for a few minutes.. Remove the excess chocolate and fill wht the sweet chili..  Then add another layer of chocolate to seal the pralines and store in the fridge.. 

They wil come out like this

major sweet chilli overflow in the first 10 minute cook!!  sheesh, I had sticky chilli sauce EVERYWHERE.......

yep really.lol
it was fine at 9 minutes and I knew i had to head to the kitchen soon so I took off in there to scrape and set for the next 40 minutes and had a pool of sauce underneath and thermie was 'covered' in it......  I've wiped and wiped and wiped and done another batch of worcestershire since and it's still sticky...

i used the sweet chili sauce as a filling for my own home made chocolate pralines..

it came out great !

i didnt have any problems when i made it

i am onto about my fourth batch of this ... and only one jar has been shared  +_+ .... i love it, so i can never see a jar of sitting about for 6 months  ;)
as long as you keep eating my pancakes .....i will stand here and keep flippin them out filled with nothing but love in my heart 'cause you chose my table to sit at =)P

Mine has been open for over a year now, because i have about 30 different sauces homemade, i do not use them every day.. The sweet chili tastes just as great as day one
