Choc chip muffins

Hello
Does anyone have a chocolate chip muffin recipe?
Kindly provide with idiot proof instructions with weight in grams, time and speed settings for the thermomix.

If possible I would also like a recipe for a fat free sponge cake.

Hi Reeve, and welcome to the forum.

I've made the muffin recipe from the EDC cookbook p123 a few times now, and it's easy and delicious.  It's very sweet, so if making chocolate muffins, I reduce the sugar to 100g.  Instead of chocolate chips, I usually just grind some chocolate - one less thing to have in the cupboard.  Yesterday I forgot to do that first.  So once I made the muffin mix, I scrapped most of it out, added the chocolate broken in pieces and blended on sp 5 until the chocolate was the consistency I wanted.  Then I mixed that into the muffin mix.  It worked beautifully.

Hi Reeve - welcome.  Agree withCB79 about the EDC recipe and adjustments.  Easy enough, but yes, don't overwork the mix.  Short blasts to mix and look inside rather than blindly following times.

Don't have a fat-free sponge - always used the egg yolks.  One of those with egg allergies may be able to provide a recipe.

Some of the consultants may help !!

Could you kindly explain the code EDC cook book- what is this.
We have just got the thermomix on Saturday.
Needles to say the recipes followed from the maker's book have been quite good, we having trouble eating all of our endeavors!!
During the sales pitch we were led to believe choc chip, fat free sponge, marmalade making recipes would be freely available on the internet.
Hence the reason for joining the forum.
Basically I had hoped to improve my cooking ability with the thermomix with easy to follow idiot proof instructions i.e cook by numbers(temp-speed-time etc)
So to sum I'm a bit disappointed and frustrated as a couple of basic recipes are not forthcoming.

Hi Reeve and welcome, I think maybe the sales pitch could have been a bit misinterpreted. I guess 100% fat free recipes will be hard to find, however I would just like to comment that by making everything yourself..... you are in control of what you and your family eat.
For example choose a recipe, a sponge recipe, you wish to make it healthier, make it with wholemeal flour, a cup of stewed apple to cut down on the sugar, use less butter and instead of 3 eggs, use 3 egg whites and 1 yolk etc There are soooo many ways to adapt the recipes to your needs. I have been on a diet for almost 5 months and have lost 15 kilos, woohoo!  ;D ;D ;D And have still eaten some lovely desserts, obviously less and I have changed ingredients, but as I AM in control, and make the desserts I make them as natural and low calorie as poss.
Take any recipe, generally they all say 50g of olive oil, I use only 10g and sauté for only 5 mins so it doesnt burn (obviously with less oil you have to watch it) but generally you can make everything to suit yourself. I have made some wicked cakes, desserts and dishes and nobody in a million years would have believed that it was a diet dessert or soup or meal.
My suggestion would be take a recipe and give it a go, experiment, don't be scared, if you have any queries .....just ask as there are many experts on here who will be able to answer and give you ideas. Good luck!
Ps I have a diet cheesecake on the forum with a tiny bit of fat in the biscuit base only! Its delicious...with diet jam as a topping ;) ;)

What book did you get with your thermomix?  Not sure where you are from, but in Australia we get a book called Every Day Cooking which we often refer to as EDC.  So that is where the recipe I use is.

I've had a quick search on this forum, there are a few recipes for muffins, but couldn't see any choc chip ones.  But you could adapt an existing recipe on here and leave out the lemon flavours, and add choc chips instead.  Otherwise, any cake recipe usually makes nice muffins.  Just adjust cooking time.

Hi Reeve - sorry to hear that you appear to have possibly been misled.

It would certainly pay to contact the consultnat who demonstrated and sold the machine first to find where the recipes are - we would be keen to have them too.

Not sure what part of the world you are from.  Hope we can help though.

Again the response has been amazing.
I live in Ireland .
The book that came with our machine is called Fast and Easy  Cooking.
I had already contacted the Thermomix UK and Ireland representative with absolutely no response. A clear symptom of the society we inhabit, make promises sell you the product and disappear.
The machine is sold telling us it produces recipes as good as the professionals so my wife adores choc chip muffins so I thought I would now be able to produce professional quality ones for her, How mis-guided.
My internet search engines are in overdrive, however, with all the hype about the machine the basic recipes do not appear to be available.

Well Reeve, I am sure that somebody on here will be able to come up with a recipe for you for muffins. Come on guys, anyone out there with a good recipe for choc chip muffins? Any other recipe you would like Reeve? I am in Spain, any thing you fancy from here?

I just looked this recipe up, and it looks very easy to convert:


Choc Chip Blueberry Muffins

Ingredients:

270g self-raising flour
165g caster sugar
2 eggs, lightly beaten
180ml (¾ cup) milk
60ml (½ cup) oil
100g choc bits
200g blueberries



Method:

Pre-heat oven to 200 degree celcius.

Place all ingredients except choc bits and blueberries in TM bowl, for 40 seconds on Speed 4-5. Add blueberries and choc bits to TM bowl, for 30 seconds, Speed 1, Reverse or until ingredients are just incorporated.
 
Fill greased muffin tins three-quarters full with mixture, bake  for 20 minutes or until golden brown. Serve warm or cold.

Makes 15.

Hi Reeve. I hope your wife enjoys the recipe. Try not to think about the UK TM people in a negative light , as the majority of people have found them to be very helpful in the past (me included).

Can you please post the Windblown Sponge (which sounds extremely light and desirable) into the "Cakes" section as it has not come up on the website at all. Ta very much.  ;D ;D
