Ok so here is my not so spectacular cooking from today. It has been a learning curve. First I made the spice mix for the biscuits and used fennel in lieu of aniseed which tastes fine. Then came the speculas which are so easy to make and make lots. Photo shows what is left after 2 batch of spread and 1 ice cream batch. Will try to make half next time. Next came tenina's sugar and spice (that's the bowl at back). Easy but used vanilla essence in lieu of bean and glacé ginger in lieu of crystal. Looks more like something the dog deposits on back lawn, but tastes fine (i mean the sugar and spice). Then came teninas speculas spread which is easy and yummy and shown at front. Used veg oil as had no almond oil so would taste even better with almond oil. Lots of ingredients for these things so trying to reduce amount of new things I buy just for one recipe. Then finally made teninas speculas ice cream bombe, in silicone cupcake mould at front, which is easy and yummy but I made a big mistake. Can you pick it? Yep little people interrupted me and I blended it for too long and curdled it. Oh bother (can I say that). Lot of effort but ice cream is nice. Will post a review in the right place later.

have only made some mini lemon meringue tarts to take to mum and dad's


That looks yum!!! Have you got a recipe for it? Possibly with step by step instruction for a newbie?

Feeling lazy today, so I made spaghetti aglio olio with spinach - all in the Thermie! Too easy.

Also making pizza for dinner. The garlic rosemary dough is resting at the moment.

Tonight will do a big cook up -- falafel for lunch boxes and curry pastes (red and yellow).

Kimmy, you're being too hard on yourself here.  There's a lot to do for that icecream  . . and I think you've done marvellously!  Particularly since you've done it all in one day . . and had little ones to distract you, too. . .  Look forward to reading your review!!

Broccoli, celery & apple salad (from forum)
Beetroot salad (EDC)
Cream salad (non TMX, with Mandarin, pineapple, sr cream, coconut & marshmallows! )

I have been channelling my inner Obbie today, and have spent the day in the kitchen.
I tried a recipe from my  Cookies in a Jar book - peanutty clusters. They had peanuts and caramel choc chips in them, and the recipe made at least 5 dozen. They are a little sweet for me, but a friend disagreed with me.
I also made a loaf of sourdough and some bread rolls.
I made rosemary salt, and Tenina's Citrus Olive salt from FFS
I also made Tenina's  Cranberry and Almond Granuesli from the same book.
I also made dark chocolate, orange and hazelnut fudge.
I tried a new recipe for dinner from the book I bought on holidays - Paprika squid & potatoes. I don't k ow why I bothered really as the kids didn't like it. >:(
I have my Christmas cooking under control now  ;D
