Nigella's meatballs and tomato sauce, so simple but always popular. Recipe from April 2012, I think it was just called Pasta with Meatballs.

$11 for a duck - that's a real bargain Gert. I always keep all the fat and freeze it for later use, and then the carcass for stock. Slow cooking or sous vide makes lovely things from duck. If you can buy turkey drumsticks this is the best way to cook them as well.

Put the quacker in the slow cooker resting on some carrots, celery and onion with bouquet garni inside it. After about 8 hours I let it cool a bit then I strained the liquid twice. Once through a regular strainer then a chux. I put that into the container and in the fridge. Meanwhile I stripped the very dead bird of every but off flesh which is what you see in the bowl. Today I will use some of the meat and all of that stock to make a risotto with added mushrooms. What is left I think I will use in a Thai style curry or duck soup maybe Vietnamese style
This morning I will remove the fat from the top of the stock and add it to some from the last duck. I will use that for roast potatoes sometime. Never waste the duck fat as it is expensive to buy.
When searching out the previous duck fat from the fridge I discovered I still had some duck meat from the last duck I cooked!!

Scary is 't it. I one defrosted dog food for dinner. Passed on that one. I m determined to empty it again to have a new start to the year. Staying away from food shops. Pantry too.

Have to bake a birthday cake today - to decorate for a little girl turning 3 tomorrow.
Cannot believe how fast 3 years have gone.....
Also need to make approx 100 apricot and ginger parfaits............
