Yesterday I boiled eggs for the kids and cooked rice for the new puppy we got on the weekend.  She is an Irish Wolfhound so is growing rapidly and needs to eat regularly.
Last night I made risotto with tomato, mushroom and chicken.  Will probably have to make Arancini for dinner tonight to use it up!
So far today have just made orange juice.

hehe judy, i do like vegetarian meals but we actually had it with a lamb korma that dh made ;) (not in the tmx)

I made the Thai Chilli chicken last night with the garlic rice. Who could ever believe that some garlic could make rice taste so nice. I can't wait to try the garlic rice as a base for fried rice- a mix of 2 cultures!
The chicken was equally as good, I only made half as DH doesn't rave about curry, but in future I will do the full amount. I will also add a bit extra chilli as I only used a small one this time and it lacked the punch. (It was all I had that was red on my chilli plant)

Two lovely recipes, and thanks Thermomixer for suggesting only 1/2 the coconut milk. That was what I did and it didn't need thickening at all. It was just right.
May all dairy items in your fridge be of questionable vintage.

Today is a baking day, so I've made a double batch of anzacs, double batch of butterscotch biscuits, double batch of choc cup cakes, batch of orange cupcakes (TMX everyday cookbook recipe. Love it!). I might make choc chips or jam drops yet (or double batch of foundation and do half of each). That should last us at least 3 weeks.

Oh, the difference children make to one's life - we would take 3 months to eat all that.  You have been busy, good on you. 8)

Orange cupcakes Cathy, is that the boiled orange and almond cake mix on page 136?  I like to tick things that people have success with so that when I am looking for something to cook, I head for my ticked pages first.

No, its the Orange or Lemon Cake. Not sure of the page. I'll check it tomorrow if you haven't found it. The Coconut Cake is really nice too.

We've also started having Joy's orange juice every morning, instead of bought juice. Gee, the fresh tastes so much better. I'd forgotten how good it tasted.

We made this yesterday - and it was so watery!  We came to the conclusion that it must be the oranges we have access to, versus the fresh oranges you have access to in Oz.  We're going to give it another go with no water, and less ice.
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

Oooh, butterscotch biscuits - must have missed those!!

Thanks Cathy, found it.  It seems as if the cake and biscuit section of the everyday cookbook is pretty good for those who do a lot of this type of baking.  Keep us informed of the best ones though, I will only cook something with ticks of approval from other users if and when I need to do this sort of thing, which these days is very, very rare. None of our visitors seem to want to eat cakes etc so my main interest is for main course meals and desserts.

Butterscotch Biscuits are in my old high school home economics cookbook. I just whizz them up in the TMX. I haven't recorded any TMX details, I just do whatever til it looks ok LOL

Her orange juice is 2 oranges, 10 iceblocks, 1-1/2 MC's water and serves 2.  (I presume you peel the oranges)
