What an amazing lot of baking Mab. Clever girl. Reading about the shakes did me the world of good. My left hand shakes a heck of a lot. Mum had Parkinson’s so it is a bit scarey. I have no other symptoms though. Thanks girls.

I have some mini Foccacia rising at the moment.

Yesterday I made a sort of vegan vegetable wellington/pie for our GD.  It has a mushroom, pumpkin & spinach filling.  It's in the freezer.   It has far too much pastry around the edge but I didn't want the filling to ooze out so she will just have to cut some of it off.  Today I made two small vegan meringues.  I did a trial run of these recently and they kept for about 2 weeks without sweating so should still be good on the day.

I made some Sultana and Almond muffins and then some Christmas shortbread today.

Were the meringues made with aquafaba Margaret?  What were they like ... crisp outside and soft inside?  I have not used aquafaba yet, but I know Chookie has ... I really should give it  go.

Marina, the meringues are nice and crisp on the outside and are softish on the inside.  I have them in a sealed container and were still crisp when I looked this morning.  These ones are bigger than the trial run I did and they were crisp all the way through.

The original recipe is from asaucykitchen.com.  I only used 1/4 cup aquafaba (from a small tin of chickpeas) slightly less than 1/4 cup caster sugar, pinch of cream of tartar, vanilla essence.   Then just followed the recipe.  I cooked them at 110 deg for 1 1/2 hours  then left them in the oven till cool.  I used a hand held elec mixer not tmx.

I had a few packets of various berries and cherries in the freezer, so this morning I made berry and cherry jam. It tastes rather nice.

I love plum pudding Icecream but I’m the only one.
I made some Walnut biscuits today but they are nothing brilliant.
I also made a batch of Almond Addiction for DD to take to work for friends.

The almond addiction is very nice cookie. I don’t know too many people who like plum puddings either.

Win Win , yesterday. Made a large loaf of ‘ Farmhouse Bread’ in new oven. Was able to use some SD which had grown.
Sent a pot of Strawberry Conserve next door. They sent back a huge bag of Warrigal Greens.
