A friend brought a heap of tomatoes yesterday so I made a batch of tomato jam. I do love it.

It's been a busy couple of days here in the kitchen cooking for the party tomorrow. 2 large bowls of potato salad, a vegan potato salad, vegan salad, 2 large trifles, chocolate ripple cake, a vegan lemon tart and a mix of vegan savouries and dips.

You’ve established a good set of recipes for your vegan family members Margaret. It’s so daunting for many having to go down that track.
I’ve done a few things lately for Christmas presents - not much cooking for me as I’ve been eating out of the freezer whilst it’s been so cool. I’ve made Nuts & Bolts and Bread & Butter Pickles and have done the first stage of both Almond Bread and Sago Plum Puddings. So enjoyable being in the kitchen when it’s not hot as it usually is at this time of the year.

I love Helen Goh’s recipes. I recently noticed one similar to my Almond Crackle biscuit. Borrowing from her recipe, I added grated orange rind and sour cherries to my mixture. Lovely result.

Women’s Weekly Sago plum puddings

Their recipe has changed from when I first started making it many moons ago, more healthy now with butter being reduced from 250g to just 120g so I thought I’d give this version a try for SIL. I imagine they’re not going to be as tasty and soft as the original recipe. I had to use tapioca too as that’s all Drakes had. I shared them amongst the TMX varoma, a large frypan and 2 large saucepans to get them all cooked at once and steamed them for 2.5 hours as I read that tapioca cooks quicker than sago. I used to steam the original recipe for 3 hrs.

Judy, they do look good.
DS and DIL for lunch tomorrow. Made a different type of chicken casserole. All in one dish. Carrot and pumpkin in base with lchicken stock, maple syrup and Dijon mustard. Chicken pieces on top with thyme leaves. Lot roasted. Served with green salad.
I’ve been giving away lots of Brazilian Cheese Puffs. I find most like something savoury when there is so much chocolate and sweet stuff around. I think this is also why the Nuts and Bolts are popular.
I’m trying to use up what in fridge before I go away. Simmered pumpkin, carrots, chicken bones and spring onions and thyme. Strained off liquid and blended veggies in TMX. Added liquid and made tasty soup. Quick meal with SD crumpets when friend dropped in.

Judy they look delicious.
Today I've made some Christmas shortbread from Cookidoo, bread rolls for dinner and a tiny bit more tomato jam. I've also done the Sweet Shortcrust pastry from Cookidoo for the fruit mince tarts and some Quick Puff pastry from Cookidoo to have in the freezer. I divide it into 4 pieces and use if for pies etc.

I made another 2 lots of almond bread so had 6 egg yolks to use up somehow. I made this custard from

which uses 4 but I was heavy handed with the milk so used 5 then for tea I had a scrambled egg so added the remaining yolk to that.

I’m now into wind down mode. Using up all perishables. The neighborhood drinks party enjoyed RTE Parmesan Shortbreads. Most of the Nuts and Bolts gone. DS and DIL brought a tray of French Macaroons and cherries. I took the Macaroons to the party. They said they were told that the first grade Tasmania cherries , Xmas week will be $50 a kilo.

I made a Classic loaf, an Everyday Sourdough from Cookidoo, some meringues with peanut butter in the centre and some Stained Glass Bread. The Stained Glass Bread is for DD to give to work friends and the meringues are for their Christmas party.

I made salted caramel fudge , a first for me . Not sure why I made it as super amount of sugar. DS liked it now let’s see that they don’t eat it before Xmas !
