It sounds as though experimenting with piping and icing combinations will guide you in the way which suits you best.  Both of your styles look amazing to me.  Perhaps a lot has to do with having a good piping bag and nozzles as well, then that would probably give you the confidence to have a go with different methods and styles.

Bored? Whats That? No chance of being bored with 5 kids, No chance of relaxing either. Oh I do love them though.

please be normal with me Dede and admit ... just some days (maybe just a couple a year  ;) ;)) you REALLY do wonder why you had 5 kids  ... please don't let me be the only one  :o :o
Possible more like a couple of times a week faffa. Its hard work having a big family that's for sure. I dont recommend it to anyone.

Yes Dede, it would be hard work, we often have 3 or 4 kids over for sleepovers and I need wine!!! Just the noise volume s incredible, having one child s easy.

Hally, save your money on the classes, and buy a set of tips and bags, and practise.
There are a lot of tutorials on you-tube, and it really is simple  ;) you just have to give it a go.
It's funny, the flower I pipe often, was originally a mistake as I used the wrong tip....so there really is no rules.

Robyn.....your icing looks pretty, like an open rose....what tip did you use?

You a so right about anything goes with icing Maddy - I used to ice wedding cakes pre children and after learning it for a few years (that rule book has been thrown out in the name of convenience and speed).  I used the large loyal icing tip No 3 - I usually use the larger one for meringues and biscuits but it was the first bag and tip which matched yesterday.  Any of the wilton closed star tips would have the same effect (wilton 24, 26 or 30 I think from memory).  :)  :)

Hally jump in feet first when it comest he perfect frosting (as I now refer to it) and icing cupcakes. As Maddy suggested youtube have some great tutorials - we direct students to them whem they are to ice a children's birthday cake as an assessment.  :)  :)

Today,  made 2 bread sticks.  1 fruit loaf,  Anchovy Pate , (posted).  Boiled orange skins and then candied them in preparation for dipping in chocolate.(not TMX).  Used left over egg wash to make pikelets for Morning Tea tomorrow.   Mashed potato to go with duck legs and steamed veggies for tea.
