Last night I made Jamie Oliver's cheats Pizza, today I made a Raspberry & white chocolate  mascarpone cheesecake, with home made  marscarpone cheese. Its my friends birthday and we are going out for dinner, then we are all coming back her for dessert. Will add a photo if it doesn't get eaten before I get a chance.

I made some spiced treacle biscuits this morning using a recipe that was posted on Taste by Katren.  Because the dough is enough to make 8 dozen, I used my KA to mix the dough as I knew it would be too much for the TM bowl.  They are really nice, I baked enough to see us through, and have frozen 3 logs of the dough to bake as we need.  If anyone would like the recipe please ask.

Made Cream of Celery soup,  to which i added cooked sweet corn and grilled sliced chicken breast,  Sour dough bread from freezer. Made Tangelo Marmalade, Shrimp paste Chips from Traveling With Thermomix. Will post Marmalade recipe if anyone is interested.

They look very nice Judy.   :)

Here's the biscuit recipe,

SPICED TREACLE BISCUITS  Makes approx 8 doz.
340g butter, softened
270g caster sugar
190g (½ cup treacle)
2 eggs
½ tsp vanilla paste (or 1 tsp vanilla extract)
480g plain flour
1 tbsp bicarb soda
2 tsp cinnamon
2 tsp ground ginger
1 tsp ground allspice
½ tsp ground cloves
½ tsp salt
Raw sugar for rolling

Preheat oven to 190 C (180 C fan-forced)

Cream butter and sugar until light and fluffy. Add vanilla and then eggs one at a time then beat in treacle.
Combine dry ingredients and add to butter mixture slowly beating until fully combined.
Place mixing bowl in the fridge for at least 30 mins to make it easier to roll.

Roll dough into small balls and then roll in raw sugar. Place on a baking paper lined trays allowing room for spreading.
Bake for 8 - 10 minutes. Let cool slightly on trays before transferring to a rack.

Yesterday my TM got its biggest workout yet - porridge, berry jam using this recipe from Jo (Quirkycooking) , the TM Stock concentrate, Oatey Burgers from the Veg cookbook, Spelt Bread rolls from the EDC, and a modifiied version of this burger recipe for hubby. Phew!
