Tuna & Corn casserole - great little dish when you have people coming to help set up a new bedroom suite and there's nothing in the fridge with shopping day being tomorrow.

36 mini pizzas for the freezer. Last week made 16 and they are all gone :o
So I'm doubling the recipe so I don't have to make them again for a couple of weeks :)

Thats a lot of pizza dede!

Ive made some more of lady flo's biscuits - chocolate this time.  A double batch, some for home and some for a team morning tea at work on Monday.

ILBs chocolate cake - made as cupcakes with a nutella centre.  Warning, they are sensational, not good for the muffin top!

And some spiced persimmon and orange jam

My DS (16) is always asking me to buy him those mini pizzas or pizza pockets for him to take to work, but at between $5-7 a box of 4 I figure I can make them for a hell of a lot less than that. And I can control the amount of topping that goes on. I never use much cheese and add lots of different toppings. So all good with no nasties ;)

Dede when you make the mini pizza for the freezer do you part cook them or do you make them up fresh and straight into the freezer?
Such a good idea  :D

I cook them as normal then place the, on trays in the freezer, once they are frozen i pack them away in plastic containers. Easy for the kids to just grab one out and heat as needed. :)
I end up making 40 of them (although i ate one and DS 14 ate one) and one large pizza to use up all the toppings.
Should keep the family happy for a while :D

I'll post up the recipe for the chocolate almond clusters when I've got a moment. They are really easy to make and really yummy too. Today I made a jelly topping for the cheesecake, iced the birthday cake and filled the Macarons. I didn't have time for anything else as I have been in and out all day. I was hoping to make the Portuguese custard tarts for tomorrow, but I ran out of time. Sigh!

Birthday time again - last year did a Disney Castle for big sister of Katie. This was all very rushed and thrown together - ILB choc cake used for all.
About to start on making the sweets for a wedding next weekend, some of you may remember the sweets bar that DD and I put together in May last year - a mutual friend who attended the wedding wants a repeat of the sweets/dessert bar for 140 guests - thankfully that is the same as last year so don't have to think about quantities.  :)  :)
