Oh no dede... Did you have your temps down between 10 and 20 degrees less thn recipe states.. In fan forced they are quite often at least 10 degrees less if not more in some cases

No Frozzie I didn't. If the recipe stated 180 I used 180. No wonder everything was a little dark. Next time I will turn the temp down and see how I go. Oops

dede, it might be worth buying an oven thermometer too, they are only a few dollars. I found my brand new oven was running 40C hotter than the dial said so I always take that into account now when setting it.

I just made ricotta! I'm laughing at how easy it was! I used an old ricotta strainer I kept after buying some and it worked perfectly. No cheesecloth needed!

Isn't funny.....people think how clever we are to make our own ricotta .....but we know the secret..LOL.
I wouldn't mind getting a strainer like yous....was it online?
I have bugs fly into my cheesecloth when on the line....and it obviously didn't occur to me to dry it inside....another der moment!

Maddy, I have green ones the same. I got mine from Woolies in their specialty cheese section. They contain 1kg of ricotta for just over $6. For the life of me I can't remember the brand

I bought I kilo of ricotta on special at woolworths and it came with the basket so I kept it! It fits nicely over a pudding bowl to strain too.

I'll have to do the same. Your ricotta looks lovely Mrs Nesbit. Did you use Helene's recipe?

I used the one on the super machine blog. I added a touch more salt for tartness. But it is so creamy! Then I made it into spinach and ricotta filling for the cannelloni. It tastes amazing and for that I just eyeballed the recipe with a box of frozen spinach, bit of Parmesan, mozzarella, tasty (about a small handful of each), pepper and nutmeg. I'm going out for dinner tonight so I'm jealous at what the rest of the house is having! Maybe they can save me some. I made the pasta dough in the TMX too (an old recipe I had), and it worked beautifully. And so fast. And my kitchen is clean.
