Well even though I'm not feeling so well I managed to make Apple puree, Bimby choc cake, coconut jam slice, Judy's cafe sized biscuits, fundj's condensed milk cheese cake, cheese and bacon rolls (about to go in oven) and roast chicken cooking now. Was going to make an egg and bacon pie for DH but not sure if I will get that done now ;)

Fundj the stuffed zucchini sounds yummy. My mum used to make these when we were young and I always enjoyed them. :)

I couldn't do all that cooking if I wasn't feeling well Mandi - what a great Mum you are.

Today I've made the Healthy 'roast' chicken from Devil of a Cookbook, Tenina's chicken stock powder from the carcass, Chocolate Brownies & Skinny Granola from an edition of Olive Magazine (UK) and Banana-choc cake to die for.

I must be on the mend Judy, although I don't feel well I still enjoyed cooking today. So that's a good sign. Hopefully I will be a little better tomorrow. I'm looking forward to our roast chicken and veggies tonight :)

Yes, you must be on the mend Mandi. How many chickens do you have to cook for your family ?

I made some chicken soup in my pressure cooker last night, just need to finish it off now (break up the chicken and add it back to the broth). I had a taste last night and it was really nice.

Astarra, I didn't keep the rind, but if you blitz it in the tmx, you can freeze it.
My Thermomix,  Kitchen Aid, Pizza oven, Nu Wave 5 in 1, Spatulas, all brings love, laughter, happiness, and great food  to my kitchen.

It's been a great day for cooking in SE Qld. The rain hasn't let up all day. So I've made...

isi's bread
Yogurt
Individual cauliflower cheeses for the freezer
Blueberry compote
Helen's ricotta which I then used to make a carrot dip (a Philadelphia conversion)
Teninas Tuscan beef stew leftovers was blitzed down and served over pasta with some baby spinache
Chocolate meringue cookies

Love days like today.  ;)

LOL. Mandi, I have to ask: if you only cook one chook, how do you decide who gets the drumsticks? And the wishbone?
Sounds like you deserve a foot massage from DH I reckon ;)

Well that's easy Amy as DH loves the drumstick so he gets that, and only 2 of the kids like drumsticks so they take I turns. The rest of us have the breast meat. And as for the wish bone no one even worries about that.
We all love chicken and all the varieties of cooking it. :D

Maddy, that is such a professional finish and totally perfect. Fantastic job. I was looking at the recipe and wondered if it was a bit sickly sweet so I hope you sampled yours so you can tell me.

Thank you Dot  :)  Hope you are feeling better.
I wouldn't describe it as over the top in sweetness...it is rich, but lovely and indulgent.  I had a small slice and was perfect with coffee.  Lovely for a special occasion treat.
